Must-Try Yunnan Dishes
- Crossing-the-Bridge Noodles — Yunnan's most famous dish. Hot broth served separately, you add ingredients yourself.
- Yunnan Rice Noodles (Mi Xian) — Thicker and chewier than other Chinese noodles. Served in countless styles.
- Wild Mushrooms — Yunnan produces 80% of China's wild mushrooms. Seasonal (June-October) but incredible.
- Grilled Tofu — Street vendors grill small cubes of fermented tofu over charcoal. Simple and addictive.
- Erkuai — Rice cakes unique to Yunnan. Grilled, fried, or in soup.
- Dai Cuisine — Dishes from Xishuangbanna's Dai minority. Fresh herbs, grilled meats, sticky rice.
